Serve these crisp, delicious potatoes with your Sunday roast and everyone will be clamoring for seconds.

COOK TIME: 50 Minutes
Ingredients

11/2 pounds new potatoes, unpeeled, cut into 1-inch pieces
3 tablespoons olive oil
Kosher salt and pepper
1 cup (4 ounces) grated Parmesan
8 sprigs fresh thyme

Directions
Step 1  Step 1:
Heat oven to 400° F.
 
Step 2  Step 2:
Combine the potatoes, oil, 11/2 teaspoons salt, 1/4 teaspoon pepper, Parmesan, and thyme in a large bowl.
 
Step 3  Step 3:
Transfer to a roasting pan or rimmed baking sheet and roast tossing once, until golden brown and crisp, 45 to 50 minutes.
